Our kids adore pancakes of any sort...but unfortunately those fluffy circles usually wreck havoc with my digestion, so I had to find some sort of compromise...these ones seemed to work! Enjoy :)
1/4 cup oats (quick)
1 teaspoon cinnamon
Extra Virgin Coconut Oil (for frying)
Topping: raw honey to taste or maple syrup
Extra Fun: roasted pecans on side!
Paleo Friendly Adjustment--> interchange the oats for ground almonds
Mash up banana in glass bowl. Whisk in eggs. Once fairly consistent with few chunks, then add cinnamon and oats. Heat skillet to high heat. Melt 1 tablespoon of extra virgin coconut oil on it.
Divide mix in half and drop on skillet to make pancake. Flip once bubbles are coming through (or tan brown on cooked side). Add honey to taste.
