Chocolate Orange Oat Bars
I am SO excited to share this delicious recipe with you! These are perfect to grab on the go, pack in your children's lunch or enjoy with a warm cup of tea or cold glass of milk. They are chewy, protein packed, mouth watering oat bars - bursting with orange flavour and chocolate chips! It's the perfect combination for a health filled, satisfying snack. My children and husband eat them so quick I can barely keep up with them!
***Ingredients:
1½ C rolled oats
1 C rice cereal
¼ C sunflower seeds
¼ C hemp seeds
½ C unsweetened, shredded coconut
1 tbsp. chia
1½ tbsp. toasted sesame seeds
¾ tsp. cinnamon
pinch of sea salt
½ C brown rice syrup
¼ C almond butter
¾ tsp. orange extract
½ C vegan chocolate chips
***Preparation
1. Line an 8" x 8" pan with parchment paper
2. Combine dry ingredients in a large bowl and mix
3. Heat brown rice syrup and almond butter over medium heat until bubbles
4. Remove from heat and stir in orange extract
5. Pour over dry ingredients and stir to combine
6. Let cool slightly to prevent chocolate chips from melting
7. Stir in chocolate chips
8. Press mixture firmly into prepared pan
9. Place in freezer for 5-10 minutes
10. Remove from freezer and cut into bars
*Store bars in refrigerator

This looks like a more complete version of what I made once before leaving for a trip and needing airline snacks: I mixed together dry oatmeal, peanut butter, and honey to form into balls.
